Because We Love French Fries

Warning: This blog post contains a recipe that will most certainly sabotage your healthy diet.

That's what friends are for.

The other day I received my October addition of the "Every Day with Rachael Ray" magazine in the mail, and my eyes and taste buds were immediately drawn to this recipe. You can click on the pic to make it larger if you'd like to copy it... or you can go get the magazine. Anyways... I went that evening to get the ingredients to make this snack along with a movie. It was a perfect "stay inside and watch a movie with your man" snack. While we were eating it, TDodds looked at me and said, "this would be an amazing seasoning for fries."

For the french fries... mix the seasoning up, but only use 1 tblspn of chives. And of course, leave out the butter and cheese. And you should certainly season to taste, we didn't use all of our seasoning.
So last night we tried it. Or should I say, TDodds tried it. I spent the better part of the hour, cleaning up the dirty dishes and keeping Aubrey Grace away from the stove.
BOY HOWDY. I heart you.
Everything in moderation right?!

And just to defend ourselves further... I heard a nutritionist say on the Rachael Ray show... or maybe Oprah... or was it the Today show... that if you want junk food... make it yourself... that way you have it a lot less!

These were the fries of my life. OF. MY. LIFE. Nothing could compare to them now. I scoff at all other french fries. Their attempts at being a real french fry are pitiful.

We dipped them in homemade ranch.

BUT... we ate them with turkey burgers.

TDodds' is a culinary genius really.

He certainly is.

That is all.

One more thing... the key to a crispy delicious french fry is to dissolve 1/3 cup of sugar into a bowl full of lukewarm water and soak the peeled and sliced potato strips for about 20 minutes. Then, drain the water and dry the potatoes with paper towels or dish cloths. Fry the strips in batches in a couple inches of oil, and try to keep the oil temp at around 350 degrees. Drain on paper towels. And if you have an iron skillet... they will taste better. Really.
